break down the preobiotics into acids (acetic, lactic and butyric).
These acids restrict or inhibit the growth of many harmful
bacteria. The "good
bacteria" also secrete antibiotic substances that limit the
"bugs" responsible for food poisoning. As a result, the
balance of the flora in the gut is favorable and the enzymes created
by the flourishing bifidobacteria and lactobacilli mixed with
gastric acid can now "crowd out" the disease causing
